Business Students Run Eagle Eatery

Students in the 2017-2018 Fall Semester Business Foundations 1 class participated in a project-based learning initiative in which they managed the Lourdes High School concession stand for the girls and boys basketball season. Through this opportunity, students applied skills learned in the classroom to a real-world, hands-on experience.

Acting as business owners, the students set very specific goals and created reports, job descriptions, business proposals, a SIM center in the STEAM lab, wayfinding signs, a logo, t-shirts and an operations manual. The students met their goals of increased profits, new products and new equipment ideas. A total of 42 students participated, which included time working behind the counter.

The project will carry over to the Business Entrepreneur II spring semester class and focus on an entrepreneurial view of the concession stand business. This was a great effort by the Business Foundations I class. As one student stated, “How many students can say they ran a concession in high school?”
